Fermentations

Fermentation: a chemical process by which molecules are changed into something new by yeast, bacteria, or microorganisms. Sauerkraut, mead, beer, wine, ginger bugs; all of these are examples of the end result of fermentation. This process has been used all around the world in different ways since the beginning of known history. 

Here you'll find things I'm doing in my own kitchen with fermentation, as well as different businesses I visit that are practicing this ancient art of preservation.
